• Ingredients :

+Lemon Cake Ingredients:

°1 1/4 cup cake flour

°2 teaspoons baking powder

°Half a teaspoon of salt

°cup of soft unsalted butter

°1 cup granulated sugar

°2 large eggs

° Half a cup of whole milk

° Half a teaspoon of vanilla extract

°1 tablespoon lemon peel

°Half a cup of lemon juice

+To make the cream cheese frosting:

°cup of soft unsalted butter

°8 ounces soft cream cheese

°4 cups sifted powdered sugar

°1 teaspoon vanilla


To prepare the cake:


Preheat oven to 350°F. Line cupcake tray with cupcake liners also set apart.

In a large bowl, whisk together the cake flour, baking powder, and salt. Sit aside.

Using a hand mixer or hand mixer, beat the butter and sugar together for 2 minutes, or until creamy.

Add eggs one at a time, stirring until completely combined.

Slowly mix half the dry ingredients, half the milk, vanilla extract, lemon peel and lemon juice; Mix until well blended. Add the rest of the dry ingredients and milk. Mix until completely combined and no lumps appear.

Put the mixture into cupcake liners with a spoon until half full.

Baking for 18-22 minn. Remove from the oven and let cool in the pan for 5 minutes before transferring to a wire cooling rack to cool completely before decorating.

To freeze:

In a large bowl, whisk together the butter and cream cheese until well blended and no lumps left.

Slowly mix in the powdered sugar, one cup at a time. Adding vanilla also beat to creamy.

Place cupcakes into cupcakes using a knife or the tip of your favorite icing (we used the 1C tip). Garnished with a slice of lemon, if desir.
