1kg potatoes, peeled and cut into large bitesize chunks
6 boiled eggs, peeled
1/4 cup Robbot peppers (optional)
1/4 cup cheese and chives dressing
1/4 cup mayonnaise
Salt and pepper
On a large pot add the potatoes and fill the pot with water, covering the potatoes. bring to a boil and cook until the potatoes are fork tender. Strain and cool to room temperature.
Add peppers, boiled eggs. Pour in the dressing and toss to combine.
Taste and adjust the seasoning if needed before covering and refrigerating until you’re ready to serve.
